Food is more often than not, the thing people photograph first and remember longest as it’s the detail that quietly elevated everything around it, or the detail that quietly elevated everything around it, or the one element that could have made it truly memorable.
Food as Visual Identity
The best event menus don’t arrive fully formed. We build them in conversation with the brand: its aesthetic, its story, its guest, its moment.
A heritage label stepping into a new chapter needs something categorically different from a disruptive new name making its debut. A luxury house hosting an intimate dinner for twenty needs something categorically entirely to a consumer brand opening its doors for a full-day activation.The best results come from genuine creative collaboration: sharing mood boards, brand references, the biography of the product or moment being celebrated. Understanding not just what the food needs to taste like, but what it needs to say to your guests.
In the context of a brand event, a canapé isn’t just food. It’s a first impression held in the hand, eaten in two bites, and almost certainly photographed before it disappears. It needs to be visually arresting, seasonally considered and impeccably executed. We think about event food the way a creative director thinks about a campaign image: what is the single thing this moment needs to capture? Sometimes that’s a miniature version of something classic, elevated with an unexpected ingredient. Other times it’s something more conceptual such as a dish built around the brand’s hero product, colour palette, country of origin or founding story. Or, sometimes it’s simply the most perfect version of one ingredient in season, served with confidence.
For us, presentation matters enormously in this context. The colour of a dish, garnish on a drink or the vessel it is served in. These aren’t just finishing touches, at Pomelo they’re creative decisions, treated as such from the beginning of the process.
The Welcome Drink as Brand Communication
Before anyone engages with the room, the product or the people around them, they pick up a drink: something cold and considered pressed, already setting the tone.
That drink tells them everything about how the next few hours will feel. A welcome drink a communication in liquid form. It can carry a colour such as a vivid, saturated tone that echoes the brand’s visual identity or a flavour story (think citrus & ginger for something new, botanical for a brand that leads with nature). It can reference a founding ingredient, a hero product and can be alcoholic or not.
We work with brands to develop welcome drinks that are as much a part of the creative brief as the food menu because the drink is the opening line and it should be written with the same intention as everything that follows.
The Art of Exceptional Service
The art of exceptional service is one that reveals itself slowly, in the accumulation of small things done with complete attention.
The guest who arrives and finds a drink already waiting. The surface cleared before anyone notices it needs to be. The member of staff who reads the room well enough to know when to offer a second round and when to simply let a conversation run.
None of these things happen by accident and none of them are the result of following a script, they’re the result of a team that has been briefed not just on the menu and the timings but on the brand, the guest and the particular energy of the evening.
For the modern creative event where the guest list is curated and the atmosphere is as considered as the aesthetic, service has to operate at the same level as everything else in the room. It needs to understand the difference between a moment that calls for presence and one that calls for disappearing entirely, between a room that is ready for the next thing and one that needs is delved into the present moment.
